LEMON COOKIES
Ingredients:
1(18 1/4 ounce) box cake mix (any flavor desired)
1 (8 ounce) container Cool Whip
1 egg
DIRECTIONS:
1. Mix all ingredients with mixer.
2. Form into balls.
3. Roll in confectioners' sugar.
4. Bake at 350 F for 10-12 minutes.
5. Cool in pan a few minutes before removing.

SNICKERDOODLES
INGREDIENTS
1 cup white shortening
1 1/2 cups sugar
2 eggs
1 tsp baking soda
2 tsp cream of tartar
1/4 tsp salt
2 1/2 cups flour
cinnamon/sugar mix
DIRECTIONS

DIRECTIONS
- Cream sugar, shortening and eggs. Add rest of dry ingredients. Roll dough into balls and roll balls in cinnamon/sugar mix. Cook about 8 minutes at 350 F.
SUGAR COOKIES
INGREDIENTS
1/2 cup butter
1/4 cup shortening
1 cup sugar
2 eggs
1 tsp vanilla
1 tsp salt
1 tsp baking powder
2 1/2 cups flour

1/2 cup butter
1/4 cup shortening
1 cup sugar

1 tsp vanilla
1 tsp salt
1 tsp baking powder
2 1/2 cups flour
DIRECTIONS
- Cream together butter, shortening and sugar. Add eggs, vanilla, salt and baking powder and mix well. Mix in flour. Chill for about an hour before rolling out. Roll out 1/4" thick and cut into desired shapes.
- Bake at 400 for 6-8 minutes.
NO-BAKE COOKIES
INGREDIENTS
2 cups sugar
1/2 cup milk
1 stick butter
1/2 tsp salt
3 T cocoa
DIRECTIONS
Mix above ingredients in "big" pan on stove bring to a boil. Boil for 1 minute.
Add:
1/2 cup peanut butter
1tsp vanilla
3 cups oatmeal
Mix together until blended, then spoon out on to wax paper, or counter, let cool by putting in refrigerator.

INGREDIENTS
3/4 cup butter, softened
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
1 1/4 cup flour
1 tsp baking soda
3/4 tsp cinnamon
1/2 tsp salt
2 3/4 cup rolled oats
1 cup raisins
DIRECTIONS

3/4 cup brown sugar

1 tsp vanilla
1 1/4 cup flour
1 tsp baking soda
3/4 tsp cinnamon
1/2 tsp salt

1 cup raisins
DIRECTIONS
- Preheat oven to 375.
- In large bowl, cream together butter and both sugars. Beat in eggs and vanilla until fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats and raisins. Drop by teaspoonfuls on ungreased cookie sheets.
- Bake 8 to 10 minutes or until golden brown.

MOLASSES COOKIES
INGREDIENTS
3/4 cup margarine, melted
1 cup white sugar
1 egg
1/4 cup molasses
2 cups all-purpose flour
2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 ground ginger
1/2 cup white sugar

- In a medium bowl, mix together margarine, 1 cup sugar, and egg. Stir in molasses. Combine flour, baking soda, salt, cinnamon, cloves, and ginger; blend into molasses mixture. Cover and chill dough 1 hour.
- Preheat oven to 375 F. Roll dough into balls and then roll into sugar. Place on ungreased baking sheets.
- Bake for 8 to 10 minutes.
